Barbie Dream Cake
Ingredients:
Cake Layers
6 Boxes of Pillsbury Funfetti Cake Mix (May be substituted with cake mix of your choice)
18 Large Eggs
6 Cups of Water
2 Cups of Vegetable Oil
Crisco Shortening
Flour
Waxed Paper
Buttercream Icing
2 Boxes of Confectioners' Sugar (sifted)
4 Sticks Unsalted Margarine (softened)
2 Tablespoons of Vanilla Extract
1/2 Teaspoon of Table Salt
Up to 8 Tablespoons of Milk
Fruit
8-10 Oranges (sliced then with peeling intact)
1 Pineapple (sliced thin with peeling intact)
1-2 Packages of Fresh Strawberries (halved, retain leaves on strawberries)
1 Watermelon (sliced then with rind intact)
2 Honey Dew Melons (peeled and sliced)
2 Cantaloupes (peeled and sliced)
1 Bag of Grapes (green, red or black - based on preference)
3 Kiwi Fruit (peeled and sliced)
1 Package of Fresh Blueberries

Directions:
Prepare each cake pan before the batter is mixed. To prepare the pans, apply Crisco shortening in a thin even layer on the sides and bottoms of all three pans. Line the bottom of the two round pans with waxed paper, then reapply another thin layer of Crisco shortening on top of the waxed paper. Flour all three pans, making sure bottom and all sides are covered with a thin layer of flour. Tap the pans to release any excess flour. This will prevent the layers from sticking to the pans.
Make the cake layers the day before you are planning to ice and decorate the cake. Follow the directions on the cake mix box to make the layers. Mix each box separately. The 12"x3" cake pan will require two boxes of the prepared cake mix; the 10"x3" cake pan will require 1 1/2 boxes of the prepared cake mix, an the dress mold will require two boxes of the prepared cake mix. Preheat oven to 350⁰ F; cook each layer at separate times. The 12"x3" pan should cook approximately 1 1/2 hours, or until knife comes out clean from the center of the cake. The 10"x3" pan should cook approximately 1 hour, or until knife comes out clean from the center of the cake. The dress mold should cook approximately 1 1/2 hours or until knife comes out clean from the center of the cake.
Let the cake layers cool in the pans on a baking rack for at least 20 mins before removing them from the pans. After the layers have cooled, remove them from the pans and let them cool completely before icing. Cut a hole in the dome layer of the cake, making the hole just big enough for the Barbie. The hole should be no more than 3" deep to keep the Barbie sturdy.
When the cake layers are completely cool, place them on a sturdy cake board with the largest on bottom and smallest on top. Use the buttercream icing to cover the layers fully. Frost each layer individually; this will help hold the cake together, as well as help the fruit stay in place. Before frosting the dome layer, place the 3 dowel rods through all 3 layers of the cake to assure the stability of the cake. Dowel rods may be trimmed to be level with the cake. Next, frost the top layer and prepare to decorate. Place Barbie in top layer of cake.
Begin placing fruit on cake according to personal preference, starting from bottom layer and working upward. Secure the fruit with toothpicks as needed. Refer to pictures below for further detail.
